■ How to sharpen kitchen knives (double-edged knives such as santoku knives, nakiri knives, chef's knives, and paring knives)
1. Fill a container at home with water and soak the whetstone for about 10 minutes.
2. Insert the support clip through the tip of the knife and slide it to the position to be sharpened. Do not use when sharpening the very tip of the blade.
3. Sharpen the knife by pressing it lightly against the whetstone and moving it back and forth. Do not wash away the sharpening slurry that forms on the surface.
4. Sharpen in the following order: tip → middle → heel. When the surface of the whetstone starts to dry, add a small amount of water.
5. Once both sides have been sharpened, gently rub the burr that has formed on the edge of the blade against the surface of the whetstone to remove it.
After using a medium-grit whetstone, sharpening with a finishing whetstone will result in an even sharper blade!
■ How to use a whetstone to flatten its surface (Maintenance of whetstones after sharpening knives)
As you use a whetstone, it gradually wears down from the center, creating a curved, concave shape.
If a whetstone is dented or scratched, it cannot be used to sharpen a blade to a sharp point, so use a whetstone flattening the surface.
1. Before use, soak the whetstone flattening stone and the whetstone you want to correct in water. Draw marks all over the whetstone you want to correct with a pencil.
2. Rub the whetstone you want to correct with a flattening stone. Rub until the marks you drew disappear; this will indicate that the whetstone is flat.
If possible, we recommend using a flattening stone to correct the sharpness of a double-sided whetstone after each use!
(It takes time to repair a sharpened whetstone that has been severely dented.)
■ About use and storage
Wash the whetstone with water, dry it in the shade, and then store it.
Avoid storing the whetstone outdoors in direct sunlight, washing it with hot water or detergent, and rapid drying with high-temperature direct air, as these will significantly affect the quality of the whetstone.
Wash the knife with dish soap, wipe it dry, and store it properly.
